How Fats Work
The Essential Fatty Acids (EFAs) are important building material for the cells of the body. They provide the cell with material to build the walls surrounding the cells. The walls built with EFAs are fluid, this allows nutrients easier access to the cell and wastes can be discharged easier. Plus the cell walls made from EFAs are very effective at keeping unwanted material from entering the cell.
If the cell was only provided saturated fats to build the cell walls, the walls would be rigid, making it difficult for nutrients to get in and wastes to get out of the cell.
Where Fats Come From
Essential nutrients are nutrients that the body cannot make and must be obtained in the diet. Polyunsaturated fats, such as Omega-3, must also be obtained in the diet, so they are essential also. You can get these from cold-water fish or fish oil supplements.
These EFAs are unlike other fats in the body, which can be made by the body. If your energy excretion is less than the amount of energy you take in, then your body will convert the excess energy into fat.

The introduction of the Atkins Diet in the 1990s, just fueled the fire over fats. This diet’s basic concept is to restrict carbohydrates in the diet and eat vegetables with limited carbohydrates and allow you to eat unlimited amounts of meats, poultry, fish, eggs and fowl.
The reason this diet is said to help you lose weight is that the body will be forced to burn stored body fats, instead of the carbohydrates. But as mentioned earlier in this article the cells material for building cell walls will be restricted to saturated fats, unless you eat mainly fish or take fish oil supplements.
